02Technical-training levelsWhat is generally covered at each stage of training.
Safety, food handling, ingredients and core production: breads, laminated doughs, pies, tarts, choux pastry, doughnuts, cookies, quick breads, cakes, fillings, finishes and introductory desserts/confectionery.
Advanced fermented goods, pastries, cakes, desserts, decorating, chocolate and confectionery, with production planning and food science.
Advanced finishing, desserts, chocolate, confectionery and complex production.

- Levels 1 and 2: in-school mark is 30% theory and 70% practical; the in-school mark forms 80% of the final grade and the standardized exam forms 20%.
- Level 3 uses the same 30/70 in-school weighting, followed by the Red Seal examination.
- Red Seal passing mark: 70%.
- Practical assessment considers safety, sanitation, organization, formula use, yield, appearance, texture, flavour, consistency and production time.

- Approximately 40 weeks.
- Standardized written examination.
- Successful graduates receive a Certificate of Completion, Level 1 credit and 900 work-based-training hours.

- Levels 1 and 2 may be challenged by eligible registered apprentices.
- Level 3 is not listed as challengeable.

- Evidence of required occupational competencies.
- Pass the Red Seal examination with at least 70% to receive the Certificate of Qualification with Red Seal endorsement.
