Safety, sanitation, tools, meat science, inspection/grading, storage and cutting of beef, veal, pork, lamb, poultry and seafood.
Advanced occupational knowledge, game processing, leadership, HR topics, fresh sausage and ready-to-serve meats.

- Both levels: approximately 30% theory and 70% practical.
- Level 1 final result: 80% in-school and 20% standardized exam.
- Level 2 requires at least 70% in school before the Certificate of Qualification exam.

- Approximately 1,170 hours or 39 weeks.
- Level 1 credit, 875 work-based hours and Certificate of Completion.
